Shrimp, Mango and Avocado Chunky Salad
What’s not to love about this easy summer salad with shrimp, avocado and mango. Summer time cooking is all about light ingredients that are quick, easy and full of nutrition.
Avocados balance hormones, contain good fats and are packed with tons of vitamins and minerals. They are also a high source of plant sterols which have been shown to help lower cholesterol. All good stuff for menopausal women!
1 Red Bell Pepper
1 pound shrimp
2 limes, juiced
2 Tbsp chopped parsley
Sea salt to taste
In a large bowl, combine all ingredients and toss gently to mix. Chill for 15 minutes, serve and enjoy!
